Kim Bitz – A Passion for Baking, A Heart for Catering

On a sweltering July afternoon, I had the pleasure of meeting Kim, whose passion for baking has blossomed into a thriving catering business over the past ten years. For Kim, cooking has never simply been a profession—it is a lifelong passion that brings people together through the joy of sharing exceptional food.
Before launching her own business from home, Kim spent five years as the pastry chef at Palma in Montreal, where she refined her culinary skills and developed the creativity that has become her signature. Yet her love of food began long before her professional career. It is deeply rooted in her family's history.
Kim's mother owned a bakery on the beautiful Caribbean island of Dominica, nestled between Martinique and Guadeloupe. During difficult years in her childhood, Kim was adopted by her grandparents, who later immigrated to Canada, where she has lived ever since. Raised in Dollard-des-Ormeaux on Montreal's West Island, she grew up surrounded by family values, resilience, and a love of good food—qualities that continue to define both her life and her business today.
Four years ago, Kim moved to Hudson and rented a commercial kitchen at Main Kitchen, located beside Alibi and Taverna on Main Road. Just as her business was gaining momentum, life took an unexpected turn. A serious illness required a three-month stay in hospital, forcing her to give up her leased space. For many entrepreneurs, such a setback might have marked the end of a dream. For Kim, it became the beginning of a new chapter.
Determined to continue doing what she loves, she resumed her catering business from home. Today, she prepares delicious keto meals for local offices, caters events for residents of Manoir Cavagnal, and creates beautiful custom cakes and cupcakes for weddings, birthdays, anniversaries, and other special celebrations throughout the Hudson area.
I can personally attest to her remarkable talent. I ordered one of Kim's cakes for my sister's birthday, and it was simply one of the most delicious cakes I have ever had the pleasure of tasting. Later, I ordered a gluten-free birthday cake for my niece, who has celiac disease. Since she rarely has the opportunity to enjoy cake without worrying about becoming ill, her delight was truly unforgettable. It was more than a dessert—it was a gift of inclusion and celebration.
Kim generally cooks on Mondays and Tuesdays according to her weekly orders but can often accommodate additional requests with as little as forty-eight hours' notice, depending on availability. She insists on using only the freshest ingredients, including fresh eggs and natural products, and specializes in gluten-free and celiac-friendly meals that have become increasingly popular among her clients.
Kim is fully certified by MAPAQ, the Quebec government's mandatory food safety and hygiene certification program. This certification reflects her commitment to maintaining the highest standards in food preparation, ensuring every meal is prepared with professionalism, care, and uncompromising attention to quality.
Her menu changes with the seasons, featuring an ever-evolving selection of vegetarian and traditional dishes, homemade desserts, and fresh side dishes inspired by quality local ingredients. One of her greatest strengths is her ability to customize menus for every occasion, whether it is an elegant afternoon tea, an intimate family gathering, or a rustic farm-to-table celebration.
Among her most requested specialties is her Caribbean Chicken Roti—a generous folded flatbread filled with fragrant curry chicken and sweet potatoes, inspired by the rich culinary traditions of her Caribbean heritage. It is a customer favourite that perfectly reflects the warmth and vibrant flavours found throughout her menu.
Looking ahead, Kim hopes to expand her catering business beyond Hudson and bring her distinctive cuisine to a wider clientele. It is a dream she continues to pursue with determination, creativity, and unwavering passion.
Meeting Kim reminded me that the finest meals are prepared not only with skill but also with heart. Her story is one of resilience, perseverance, and generosity—proof that when passion is combined with talent, every dish becomes an expression of love.
